Tequila

Tequila is a drink of ancestral origin, which has been produced since the 16th century (Approx 1538) and which takes its name from the region where it is born. Tequila is therefore also the name of the city that gave rise to this drink and where there are a large number of factories that produce it.

Tequila is an alcoholic beverage obtained from distillate, originally from Tequila, in the state of Jalisco, Mexico. It is made from the fermentation and distillation – like mezcal – of the juice extracted from the agave, in particular the so-called “Blue Agave”.

For one reason or another, tequila is now considered the “excellence Mexican” alcoholic beverage, just as mariachis and charros from Jalisco are the archetype of all the music of Mexico and of all of us who live in this country.

Tequila is a product that is made only in certain regions that are in denomination of origin, these regions are: Jalisco, part of Nayarit, part of Michoacán, part of Guanajuato, and part of Tamaulipas.

According to their maturation process, tequilas are classified into 5 varieties or classes:

White or silver tequilas: They are transparent tequilas, not necessarily colorless, which after the distillation process continue with the rest of the unit operations, without going through aging in wood.

Young and gold tequilas: They are the resulting tequilas from the mixture of a white tequila with a reposado, añejo or extra añejo.

Tequila reposado: Product that is matured in pipones (wooden containers greater than 600 lt) in oak barrels for a minimum period of 2 months and less than 12 months.

Añejo Tequila: Product whose maturation period in direct contact with the wood, in oak barrels of up to 600 liters, must be at least 12 months and less than 36 months.

Extra Añejo tequila: Product whose maturation in direct contact with oak barrels of up to 600 liters must be at least 3 years.
